Back on the Paleo wagon :)




Friday I discussed with my doctor (for baby #2) that I was needing something to limit food intake, and still be plenty healthy & full for the peanut. She was not concerned however I am because all the pounds we put on we must get off eventually and well I don't like the way extra pounds look or how they make me feel. We decided upon lean meats and high fiber... So back onto the Paleo/Gluten free path...

truth be told I should be doing this anyway since I have Crohn's disease and processed foods and wheat cause inflammation.. so here are some recipes I made this week:



Coconut Pancakes:

Not a huge fan just yet, but it was the first time I made them, and I ate them , so.. :)

I also made extra and froze them so I have a quick lunch or two (if I choose) throughout the week!

I made these to go with my smoked burgers and smoked pork (pulled pork sliders)

This afternoon I hope to make homemade fruit roll-ups, if I can get the energy.. the baby has been draining me of any energy...

Fantastic Juice on DAY ONE (Juice/Paleo/HEALTHY!)



1 - bunch of kale, peel the middles out and rinse
2 - tangelos peeled
4 - red delicious apples

Delicious!!

So confession - I drank 6 of the ounces for breakfast with an egg... then for lunch used the kale juice to make a fruit smoothie with 1/2 protein serving. It was also delicious!

Tonight's dinner - lettuce wraps with filet mingon

Well. Made a new dish.
Homemade marinade: Seasame seeds, fresh garlic, salt, pepper, honey, olive oil & honey.
Mix all marinade ingredients and set aside.
Cut your 1.5 lbs of filet meat into strips
Add filet strips to the marinade. Refrigerate for at least 20 minutes.
Cook for 10-15 minutes on medium in skillet.

Add to Artsian or Bibb lettuce. Top with cabbage/carrot slaw or red/orange bell pepper slices

Drizzle with Basalmic vinegarette.

Pineapple Berry Surprise

Today's juice was an intersting one, yet VERY tasty indeed!

1 - Pineapple, rind remved
1/2 - Cucumber (peeled)
2 - Oranges (peel removed)
1/2 - pint Blueberries
1/2 - pint Blackberries

makes about 30 ounces and is absolutely delicious!!

I had a variation of this juice this morning:

Apple (1 - core removed)
Carrots (10 baby carrots peeled)
Pineapple (1 - rind and peel removed)
Red grapes (1 - approx 1/2 pound)
Orange (3 - peeled, cut into haves to fit in the juicer)

GREAT JUICE! Delcious and healthy way to start off the day!

Berry Blaster!

Great pick me up juice to start the day off right!

4 - half pints of blackberries
1- pint of blue berries
2 - cucumbers (peeled)
1/2 - Lemon (peel intact)

Makes approximately 26-32 ounces, depending on the size of the cucumbers.

YUM!!

Sweet Juice!! Knocking out the sweet tooth!

This morning's sweet tooth has been cured:

1/2 bag of baby carrots already peeled (approximately three large carrots)
1/2 Pineapple (rind and core removed)
2 Fuji apples (core removed)
2 Green apples (core removed)
1/2 Lemon

Makes approximately 30 ounces and its a sweet one for sure!

Quick Breakfast Juice - delish!!

A very nice and light breakfast juice:

1/2 Small watermelon (seedless, or seeds removed)
2 Orange
1 pint of strawberries
1/2 lemon (peel intact)
1 cucumber (peeled)

Also good, exchange the strawberries for blueberries!

Delicious Breakfast - Fruit Juice ideas

Juicing ideas, that taste fabulous together!!

Breakfast Berry Blast!!

1/2 - Small watermelon
1 - pear
1 - pint of blueberries
1 - pound of seedless grapes
1 - piece of ginger (approx 1 inch)
1 - pint of blackberries

** For extra juice add a cuccumber or a few carrots or BOTH! ** Tastes great!!

Juicing 101: tips and tricks part one

This week John and I started our 7-day "reboot" and have discovered that some of the fruits and veggies do not mix well together in large quantites. For our version of Joe Cross' "Mean Green" we have made a few variations:

Substitute the celery for pears (adds a sweeter taste)

Substitute Brocoli for celery (anything to avoid celery, my hubby hates it!)

Standard "mougsncougs" version of Mean Green:
6 - Kale Leaves
3 - Cucumbers (peeled)
4 - Celery stalks (or substitutions above)
2 - Apples (used Gala, instead of green)
1/2 - Lemon
1 - piece of ginger (approx 1 inch)

** Things I have added this week to change up the flavors are: extra apple, pear, and even a little pineapple **

Morning Zinger! Delicious juice recipe

So I have come to make my own little creations, through the power of trial and error, here's a fabulous juice I made for today's breakfast:

Morning Zinger:

4  - Pineapple Spears (approx 1/2 pineapple)
10 - Strawberries (hulled)
2 - Gala or Fuji Apples (core removed)
1 - Lemon (peel intact)
10 - Baby Carrots (or 2 large carrots, peeled)
1 - pint of Blueberries (small clamshell)

Absolutely delicious, makes approximately 24 ounces.

1 small red apple (i used Fuji becuase I like the way the taste better)

1/2 Mango (I substitued 2 Clementines, since I had no Mango)

I watched this film with John the other night and it really made an impact on both of us. I have been juicing for Crohn's Disease and not really asking JOhn to partake. However we have been exposed to Joe Cross and his new and healthy living tactics!" One of the famous recipes is: Mean Green":
